Chilli beef and cashew stir-fry 06-01-2016

This beef stir-fry recipe is so easy to whip up - slices of steak are stir-fried with veges and cashews and served with noodles and chilli jam


1/3 cup cashews
1 tbsp vegetable oil
500g beef fillet, sliced or beef stir-fry strips
450g bag fresh stir-fry vegetable mix
200g thick rice noodles, sliced, blanched
200g tub chilli jam
2 spring onions, shredded



  1. Heat a wok or large frying pan on high. Add cashews and toss for 1-2 minutes until golden. Transfer to a plate.
  2. In same wok, heat oil on high. Stir-fry beef in 2 batches for 3-4 minutes each until sealed and browned. Transfer to a bowl.
  3. Add vegetable mix to wokand stir-fry for 2-3 minutes.
  4. Return beef to wok with noodles and chilli jam. Stir-fry for 2-3 minutes until hot. Serve sprinkled with spring onions and cashews.
