Avocado, Tomato, Cucumber, Corn, Chickpea and Cashew Salad with Feta Cheese – The best spring and summer salad! Very quick and easy to make! Light, full of healthy ingredients and perfectly refreshing!
When we are talking about healthy food, we know that we need to avoid fatty foods, especially at summer. We need to eat something refreshingly. Try to eat lots of fresh vegetables and fruits. Salads are great choice for snacks, or you can eat them like sides for lunch or dinner
1½ cup tomatoes (I used cherry tomatoes)
1 cup chickpeas
1 cup sweet corn
⅓ cup cashews
½ cup feta cheese
1 red onion
1 lemon (juice of one lemon)
½ teaspoon black pepper
1 teaspoon sea salt
2 tablespoons olive oil
⅓ cup parsley
Chop up all the ingredients.
Mix all the salad ingredients together and add all to a large bowl.
Cube feta and add to bowl.
Toss gently so the feta and avocado don't break up.
Whisk together juice of one lemon, olive oil, black pepper and sea salt.
Pour over salad. Enjoy.
